BBQ Pulled Beef Sandwiches {slow-cooker}

With A Blast: BBQ Pulled Beef Sandwiches {slow-cooker}   ---- favorite among all !    #sandwich #pulledbeef #slowcooker #coleslaw #bbq

What a wonderful sandwich !  The meat is so tender and full of flavor and with the crunchy coleslaw which has a tinge of sourness, it is the perfect sandwich for all ages.

The coleslaw is delicious on it's own as well, so if you have any left {or make a double batch!} have it the following day for lunch with some cold meat.

One of these might not look like much, but it is very filling and I could only manage one {but,,, did go back for seconds later!}

BBQ PULLED BEEF SANDWICHES {slow-cooker}

12 sandwiches

1.5kg Beef Shortrib
Salt & Black Pepper
Olive Oil

SAUCE/MARINADE:

1 Onion, quartered
4 t Garlic, crushed
1/2 cup BBQ Marinade   {I used the #Castle brand, but your favorite is fine}
1/2 cup Tomato Sauce
1/2 cup Cider Vinegar
1 can (400g) Whole Tomatoes
2 TB Worcestershire Sauce
1 TB Ground Coriander
1 TB Paprika
1/4 cup Brown Sugar
1/4 cup Bourbon
3 Bay Leaves

COLESLAW:

2 cups Red Cabbage, finely sliced
2 cups White Cabbage, finely sliced
1/4 cup Italian Parsley, roughly chopped
1 Red Onion, finely sliced
1 Carrot, grated
1/4 cup Lemon Juice
2 TB Horseradish
1/2 cup Greek style Yoghurt

12 Buns/Rolls

1.) Heat a glug of Olive Oil - season the Shortrib with Salt & Pepper - brown in the Olive Oil - place the meat in a marinade container.
2.) Place all the ingredients for the Sauce in a blender - blitz until smooth - pour over the meat - marinate for at least an hour {or overnight, as I usually do}.
3.) Pre-heat the slow-cooker on HIGH for 20 minutes - place the meat and sauce in layers into the slow-cooker - cook 4 hours on HIGH {or 6 hours on LOW} until tender and the meat is falling off the bone.
4.) Remove the meat from the cooker - shred the meat and discard the bones - place back into the sauce for another 20 minutes.
5.) Toss together the Red- and White Cabbage, Parsley, Onion and Carrot in a large mixing bowl.
6.) Combine the Lemon Juice, Horseradish and Yoghurt - stir into the Coleslaw.

To Serve : Place a large spoonful of Coleslaw on the bottom part of a bun/roll - top with meat and finish off with the top piece of the bun/roll.

Enjoy !

  1. I enjoy BBQ sandwiches in the summer when it's too hot to cook and I can throw everything in the slow cooker and walk away :) I love finding and trying new recipes - pinning this one!
