Teriyaki Beef & Greens Stir-Fry

Stir fries are among my favorite go-to dinners when I need to whip up something quickly.  I love the crunchiness of the vegetables and the tender meat.

The beef gets marinated in the Teriyaki Sauce at first and then I cook/stir-fry the meat in the sauce as well - it takes a little longer to reduce the liquid, but it is totally worth it.

I think this is one of the prettiest stir-fry recipes - the meat color and green !  I do like the usual multi-color stir-fry recipes, but now and then I want to serve something which looks just that little bit different.

Simple, but quick and delicious especially when you are in a hurry to get dinner on the table.

TERIYAKI BEEF & GREENS STIR-FRY

{6 large servings}

200ml Teriyaki Sauce
4 t Cornflour
1kg Beef strips
3 - 6 TB Cooking Oil
2 Onions, halved and sliced
2 Green Bell Pepper, sliced
500g Green Beans, ends clipped

Jasmine Rice and Coriander to serve.

1.) Mix the Teriyaki Sauce and the Cornflour - add the Beef strips - keep aside to marinate while you carry on with the recipe.
2.) Heat 2 TB Oil in a large wok/pan - add the Onions and saute until light brown and soft - remove from pan and keep aside.
3.) Using the same pan - add more Oil {if needed} and stir-fry the Green Bell Pepper and Green Beans for 5 - 8 minutes {the Beans must still be crunchy} - remove from pan - add to the Onion which is being kept aside.
4.) Add more Oil to the pan - cook the Beef strips until done and the sauce has reduced by about 75% - add back the vegetables and heat through.

Serve over Jasmine rice and garnish with Coriander.

  1. Nice quick and healthy. We're about to put in the pakchoy for winter do you think that would work with the beef and sauce instead of the greens? peppers get pricy in the winter months.
