Coconut Lime Milkshake


Coconut and Lime Milkshake ~ Tropical explosion ! Topped with Peppermint Crisp chocolate #Milkshakes

It is time for the monthly Dessert Challenge again, hosted by Sheryl, from LADY BEHIND THE CURTAIN !  

For this month our two ingredients are Coconut & Lime.  Roy loves Lime Milkshake and seeing as I have never made Lime Milkshakes before, I thought it a good idea to try a recipe of my own making for this challenge.

COCONUT & LIME MILKSHAKE

{serves 2}

1 can Coconut Milk
1 cup Milk
1/2 t Coconut Essence
6 - 8 TB Lime Juice
1/2 cup Caster Sugar {or to taste}
Peppermint Crisp Chocolate, grated

1.) Pour half of the Coconut Milk in an ice-tray and freeze {2 - 3 hours}
2.) Place the Frozen Coconut Milk, the remaining Coconut Milk and all the other ingredients in a blender - blitz until thick and foamy.

Pour into glasses, sprinkle grated Peppermint Crisp over and serve ice cold.

{to make the shake even thicker - add 1/2 - 1 cup Vanilla Ice-Cream before blitzing}

My daughter will love you forever, she is always missing milkshakes from home (Spur), and milkshakes are not really a thing here unless you go to the local Mc Donalds, but their flavours are also limited. Her favourite is Lime and I was wondering how I could make one for her - you have answered my question :)
