Ginger Apple Pork Chops

I have not made this in quite some time - another great recipe! Pork Chops were on my mind since this morning and then this old favorite of ours popped into my head again.

Gravy with apple pieces, and ginger - great combination when served this way. The meat cooks in the gravy/sauce together with the apple in the oven.

No more chit, chat - here's the recipe:

Ginger Apple Pork Chops

1 can (385g) Pie Apple slices
6 - 8 Pork Chops, trimmed of all fat
1 cup Ginger Ale or Ginger Beer
1 TB Muscovado Brown Sugar
2 t Ground Ginger
1 1/2 t Salt
1/2 t Mustard Powder
Pinch of Freshly Ground Black Pepper
Brown Gravy Thickening Powder, as needed

1.) Pre-heat oven to 160 deg C (325 deg F) - Spray a large oven dish with Spray 'N Cook (Should be large enough for a single layer of meat)
2.) Place the Pie Apple pieces on the bottom of the oven dish - arrange the Pork Chops on top of the Apple pieces - pour the Ginger Ale/Beer over the meat.
3.) Mix Brown Sugar, Ground Ginger, Salt, Mustard Powder and Black Pepper - sprinkle over the meat.
4.) Bake 1 1/2 hours - remove dish from the oven, carefully lift out the meat and pour the gravy, with the apple pieces, into a small saucepan. Replace the meat back into the oven dish and place under the grill to brown evenly.
5.) Meanwhile, prepare the gravy by heating  over low heat - mix a little Gravy Thickener with some of the gravy and add to the saucepan, repeat until you are satisfied with the thickness.
6.) Once the Pork Chops are nicely browned, remove from the oven - transfer to a serving dish, and pour the gravy with the pieces of apple over. Serve immediately.

This is a no-fuss, and fairly low in fat, dish {providing of course all the fat is removed before cooking}
