Lemon Meringue Toffees (3 Ingredients)

Lemon Meringue Toffees ~ Only 3 ingredients to make these creamy, delicious sweet treats and it really tastes like Lemon Meringue ! #Toffees #Candy #3IngredientRecipe #SweetTreats

Oh my goodness ! Do I have a delicious sweet treat for you today ... Lemon Meringue Toffees and you only need 3 ingredients to make them.

And less than 5 minutes to prepare ? Yes, definitely my kind of candy - quick and easy. These Lemon Meringue Toffees are so creamy, it is almost unbelievable. Gooey, but not so much that you will lose any teeth biting into one of these.

It may look like a Fudge, but to my meaning a Fudge is more sugarish whereas these delightful Toffees are soft and chewy. Nowadays all store bought Toffees seem to be in competition as to which one could break a tooth first.

And for the taste .. you would think it is a bite of Lemon Meringue Pie, without the crust.

LEMON MERINGUE TOFFEES

24 - 36 Toffees {depending on your cut}

INGREDIENTS:

1 can (397g) Sweetened Condensed Milk
4 (80g each) slabs White Chocolate, good eating quality, chopped
1 Lemon

DIRECTIONS:

1.) Bring the Condensed Milk to a boil in a medium saucepan - lower heat and simmer 3 minutes, stirring continuously.
2.) Remove from the heat - stir in the White Chocolate until smooth.
3.) Add 1 tablespoon Lemon Zest and 3 tablespoons Lemon Juice, freshly squeezed from the Lemon - stir until well combined.
4.) Pour into a lined {let the edges hang over for easy removal} standard size (20cm / 8") round cake pan - or similar - chill 2 hours or until firm.

If you prefer, sprinkle more grated Lemon Zest over just before chilling, but be aware that the added Zest will also make them more zesty - which I, for one, do not  mind at all.

Using a hot knife, cut into squares and serve. Keep any leftovers in a sealed container in the refrigerator.

We had a few left the next day and I took the above photo to show you that it is still creamy, soft and so gooey, but note the outside of the Toffee did dry a bit, just as it should.

I also cut them into tiny cubes as this is an extremely sweet treat - not that it stopped us from over indulging in these little gems ;-)
