Crispy Baked Balsamic Chicken

The outside of these chicken fillets might be crispy, but the inside is so tender and juicy ! And served with a generous scoop of basil carrots, the crispy baked Balsamic Chicken is a delicious meal.

If your oven is big enough, bake the carrots and the chicken at the same time - if not, bake the carrots first and keep warm until the chicken is done.

I served this with mashed potatoes and peas on the side, which is always a winning combination, especially because it is so colorful. I remember when my kids were younger, I always tried to work in at least 2 bright colored vegetables with every meal - adults definitely eat with their eyes, but also smell etc, whereas I think {just my opinion!} kids always eat with their eyes.

To this day, Dimitri still refers to food as "that green this-or-that" or "that-orange-this or-that" Almost seems as if he does not want to call vegetables by it's name !


Serves : 4 - 6



4 Carrots, peeled and sliced thinly lengthwise
1 TB Olive Oil
Salt & Pepper
1/2 cup Basil Leaves
1 TB Balsamic Vinegar


500g Chicken Fillets, sliced into steaks
2 - 3 TB Dijon Mustard
1 cup Dry Breadcrumbs
2 t Oregano
Salt & Pepper


1/2 cup Balsamic Vinegar
1/4 t Salt
1/4 t Black Pepper


1.) Pre-heat the oven to 230 deg C (450 deg F) - spray a medium oven dish (for the Carrots) and a large oven dish (for the Chicken) with cooking oil.
2.) CARROTS: Coat the Carrots with the olive Oil and season with Salt and Pepper - place in the medium oven dish and bake 10 minutes or until crispy but still tender.
3.) CHICKEN: Coat the Chicken with the Mustard - combine the Breadcrumbs, Oregano, Salt and Pepper - roll the Mustard coated Chicken in the Breadcrumb mixture and place in a single layer on the large oven dish - bake 15 - 20 minutes or until done.
4.) Meanwhile, prepare the GLAZE: Place the Vinegar, Salt and Black Pepper in a small saucepan - heat until it starts to boil - reduce the heat to medium and simmer until the Glaze turns lightly syrupy.
5.) Remove the Carrots from the oven - stir through the Basil and Balsamic Vinegar.
6.) Once the Chicken is done - place on a serving plate - top with the Carrots and drizzle over the Glaze.

Serve immediately.
