Thick Coconut Hot Chocolate {Lactose-Free}


I do not have a big variety of favorite drinks .  Coca-Cola is my first and last drink of the day, no matter the weather or season, but during the evening I like to have a thick Coconut Hot Chocolate.

I think I'm with Coca-Cola as other people are with Coffee, Tea or even Energy drinks, in the sense of must-haves or should I say "necessity" ?

But, now and then, I do actually put my C&C aside for some other delicious treat.  Vanilla Tea is one of my monthly drinks and of course this Hot Chocolate recipe which I am sharing with you today !

This drink is so thick and creamy !  I might have written a poem about it, if I had any idea at all on writing poems, which, fortunately, I have zero knowledge of.  I say fortunately, because I really do not want to lose any of you because of reading a horror paragraph or ten.

The recipe is also Lactose-Free.


Thick Coconut Hot Chocolate {Lactose-Free}



2 Servings

INGREDIENTS:

1 can (400g) Lite Coconut Milk
3 Heaped TB Cocoa Powder
2 TB Water
1 t Vanilla
Sugar, to taste
Marshmallows, to top

DIRECTIONS:

1.) Heat the Coconut Milk in a medium pot.
2.) Mix the Cocoa Powder with the Water to form a paste - add to the Coconut Milk together with the Vanilla and Sugar.
3.) Heat through - pour into tall serving glasses and top with Marshmallows.

I like to keep a little of the mixture aside to drizzle over after the Marshmallows have been added.

Perfect on a cool night or a cold day - Enjoy !

  2. Oh I do trade out my coffee for hot cocoa in the winter and this looks really good! I think you should try a poem about hot chocolate! LOL!

  4. Oh Yum Linda! It's perfect for me, okay I might add a double shots of espresso...but I love that it's dairy-free! :) I think I will go make one now. ;)
