Chocolate Chip Cookie & Oreo Fudge Brownies

The name is a mouthful, but let me assure you, it is one of the best Brownie bars I have ever had !  I found this recipe while stalking the Six Sister's Stuff's site, as I do on a regular basis when I am looking for something mind blowing.

And I found THIS recipe, which is also being called the "Brownies On Steroids"  {this is according to the guys who is working with the husband of the sister who made this} - I totally agree with them...out of this world and definitely worth serving warm with ice-cream and a topping.

I have sent some with Cheri to boyfriend, Vince, and he wanted to know why I only sent him FOUR !  And when I slice bars, I do it big time, so it was not that I sent him mini bars.

Chocolate Chip Cookie & Oreo Fudge Brownies

{18 servings}
{slightly adapted}

1 cup Butter, softened
1 cup Caster Sugar
3/4 cup Light Brown Sugar
2 Extra-Large Eggs
1 TB Vanilla Essence
2 1/2 cups Flour
1 t Baking Soda
1 t Salt
2 cups Chocolate Chips
18 - 24 Oreo Cookies
1 box Brownie Mix   {plus ingredients listed on the box}
1/4 cup Toffee Syrup

Ice-Cream, to serve
Extra Toffee Syrup, to serve

1.) Pre-heat the oven to 180 deg C (350 deg F) - line a baking sheet with baking paper - let the baking paper stick up at all 4 of the sides {that will let the batter rise without dripping over the edges}
2.) Beat together the Butter, Caster Sugar and Brown Sugar until creamy - 3 - 5 minutes.
3.) Add the Eggs and Vanilla - beat until combined.
4.) In a separate bowl, mix together the Flour, Baking Soda and Salt - add it slowly to the Butter/Sugar mixture until just combined - stir in the Chocolate Chips.
5.) Spoon the batter in the prepared baking sheet - Top with a single layer of Oreo Cookies.
6.) Prepare the Brownie mixture as per the instructions on the packaging and add the 1/4 cup Toffee Syrup - stir well - pour the Brownie batter over the Oreo Cookies.
7.) Bake 45 - 55 minutes.

Serve warm with Ice-Cream and Toffee Syrup.  {The bars keep well in an airtight container for up to two days}
