Basic Watermelon Salad

Basic Watermelon Salad ~ Delicious and refreshing and so EASY to make #Salad #SummerSalad

Up until a couple of years ago, I never had watermelon as a salad - in a fruit salad for dessert, yes, but never as a proper side salad to meats. I thought I'll share a recipe for a very basic watermelon Salad today, with a few optional extras which you can add.

Most, if not all, food bloggers already know all the ways around watermelon, but sometimes we {read -- ME} often forget that non-bloggers read our recipe posts as well. Not only non-bloggers, but young cooks do as well and as cultures differs so does the way people are used to only certain types of foods seen as normal.

I can almost guarantee you that if I stumbled onto a complexed, herb filled, watermelon recipe a few years ago, I most certainly would have passed. This basic Watermelon Salad recipe is a great way to sort of introduce oneself to something new, and if all goes well, next time you might add not only one extra ingredient, but a couple.

6 cups Watermelon, cubed
1 Red Onion, sliced
1 cup Low-Fat Feta Cheese, cubed
2 TB Extra Light Olive Oil
3 TB Lime Juice
Black Lemon Pepper, to taste
1/2 cup Fresh Mint Leaves

1.) Place the Watermelon, Onion and Feta in a serving dish - toss to mix.
2.) Mix together the Olive Oil, Lime Juice and Black Lemon Pepper - drizzle over the Watermelon.
3.) Top with the Mint Leaves and Olives {if using}.
4.) Chill until ready to serve.

Optional extras to add include :  Kalamata Olives, nuts, seeds, baby leaf herbs, mixed lettuce, pickled onions etc.

  1. So refreshing. I had this when I was a dinner guest once (or something like it...) I had never had it before, and I loved it. I would definitely take it to a summer picnic!

  2. I've never had anything like this, but it does sound tasty!

  3. I had never seen anything like this until a couple years ago when my husband and I ate out at a very fancy restaurant and I got a watermelon arugula salad. It was DIVINE! Yours looks really divine, too!
