This is another recipe which I have been making on and off for years. I found this in a recipe book by Christelle Erasmus which is all about low-fat, healthy dishes.

The original name {translated from Afrikaans} is "No-Patience Beef Casserole" and that is exactly what this Dump and Bake Beef Casserole is about !

Low in fat, low in preparation time and so easy to make - what more can I ask for !  I have not tried this recipe in my slow-cooker yet, but am aiming to do so.

I only serve this casserole over brown rice, with no additional side dishes. It is simply not necessary as this is very filling and there are loads of sauce {which of course is low in fat as well, so you can add as much as you like over your meal}.

Also, do not be put off by the amount of different ingredients - remember it is dump and bake ;-)

DUMP AND BAKE BEEF CASSEROLE {LOW-FAT}

6 Servings

INGREDIENTS:

750g Lean Beef Cubes
10 Small Cocktail Onions, peeled  {or 2 Large - quartered}
2 - 3 Large Carrots, sliced into rings
1 Slice Wholewheat Bread, crumbed
3 Whole Cloves
4 t Garlic, crushed
3 TB Fresh Parsley, chopped
1 TB Worcestershire Sauce
1 t Salt
1 t Black Pepper
1/2 cup Low Sodium Beef Stock
1/2 cup Dry Red Wine
2 TB Brandy
2 TB Tomato Paste
2 t Sugar

250g Small Mushrooms
1/3 cup Extra Dry Red Wine
Parsley, to garnish

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a large oven dish {with a cover} with cooking oil.
2.) Place the Beef, Onions, Carrots and Bread Crumbs in the prepared oven dish.
3.) Mix together all the ingredients from the Whole Cloves through {and including} the Sugar in a mixing bowl - pour over the Beef and Vegetables in the oven dish - cover and bake 1 1/2 hours.
4.) Remove dish from the oven - add the Mushrooms and Extra Red Wine - give it a gentle stir through - cover and bake another 1 hour.
5.) Transfer to a serving dish and garnish with Parsley.
