Sausage & Spinach Spaghetti

Sausage and Spinach Spaghetti

This is a perfect pasta dish for a busy weeknight or a lazy Saturday afternoon.

It takes less than 30 minutes to prepare, cook and dish up.
The Parmesan sauce is just enough to add flavor and moisten,
without drenching the Spaghetti.

You can use Pork or Beef sausage meat - I used Beef this time,
but have made it, using Pork before and it was equally delicious.

4 Servings

Olive Oil
8 Sausages  {Pork or Beef}
3 t Garlic, crushed
1/2 t Dried Chili Flakes
4 handfuls Spinach, shredded
1/2 cup White Wine
1/2 cup Fresh Cream   {whipping cream/double cream}
3/4 cup Parmesan Cheese, grated
Salt & Freshly ground Black Pepper, to taste

500g Spaghetti or Spaghettini, cooked and drained

1.) Remove the casings from the sausages - form small meatballs with the
meat - place in the freezer for 5 minutes.
2.) Heat a little Olive Oil in a large pan - cook the meatballs until
done {about 8 - 10 minutes}
3.) Add the Garlic and Chili flakes - cook another minute,
stirring continuously - add the Spinach and White Wine - stir-fry
one minute - cover and simmer 3 - 5 minutes - add the Cream and the
Parmesan - cook until the Parmesan has just melted - season to taste
with Salt & Pepper.

Serve over pasta - quick and delicious !
