Strawberry Cheesecake Muffins

This is an excellent recipe for a quick teatime treat or for when you need to "take-a-plate-with" to a gathering.

I think I have mentioned before, that I love baking muffins instead of cupcakes, as muffins usually do not get some kind of decorative topping - which I am an absolute horror in doing.

These muffins are similar to a recipe I tried a few months ago and did not end well.  I am glad to say that this recipe which I found HERE is excellent - the muffins are moist and stuffed with jam and cream cheese.

There is no need for Butter or any kind of spread - they are perfect as is.


12 Muffins

125g Cream Cheese, softened
1/4 cup Icing Sugar
2 1/2 cups Flour
1 TB Baking Powder
1/2 t Salt
1 Egg
1 1/4 cup Milk
1/2 cup Brown Sugar
1/3 cup Butter, melted
1/2 t Vanilla
12 t Strawberry Jam

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 12 hole muffin pan {lined with cupcake liners} with cooking spray.
2.) Beat together the Cream Cheese and Icing Sugar - keep aside.
3.) Sift together the Flour, Baking Powder and Salt in a large mixing bowl.
4.) Beat the Egg, Milk, Brown Sugar, Butter and Vanilla until well combined - add to the Flour mixture - stir until just combined {do not over-mix}
5.) Spoon half the batter into the cupcake liners - add a teaspoonful of Strawberry Jam and divide the Cream Cheese amongst the liners - top each with the remaining batter.
6.) Bake 20 - 25 minutes until golden brown on top.

Remove from the oven and transfer to a cooling rack to cool completely.
