Chocolate Carrot Cake Bars


Carrot cake is one of my favorite cakes, especially a moist cake with a sourish cream cheese topping.  The recipe I have here today, does not have a "sour" topping, still cream cheese, yes!  But with a chocolate addition ...

I made these in a medium pan and sliced the cake into {double-}bite sized bars and only added the Icing afterwards to each piece.  The other thing I preferred was a thinner Icing than usual, but if you want it thicker - add more Icing Sugar until you are satisfied.

And yes, I will totally make this version again!  Chocolate can only add to a sweet treat, not make it worse {well, that's my way of thinking anyway...}

CHOCOLATE CARROT CAKE BARS

{12 - 18 servings - depending on your cut}

1 1/2 cups Self-Raising Flour
1/4 cup Cocoa
1 t Cinnamon
1/4 t Nutmeg
1/4 t Mixed Spices
1/2 cup Pecan or Walnuts, chopped
1/2 cup Raisins
1/3 cup Coconut
3 Extra-Large Eggs
3/4 cup Brown Sugar
1/2 cup Oil
125g Milk Chocolate, melted
3 cups Carrots, shredded


250g Cream Cheese, softened
125g Milk Chocolate, melted
2 - 4 cups Icing Sugar   {add to your preference}


1.) Pre-heat the oven to 160 deg C (325 deg F) - spray a 23 x 32cm pan with cooking spray {I always line the pans as well}
2.) Sift together the Flour, Cocoa, Cinnamon, Nutmeg and Mixed Spices in a large mixing bowl - add the Nuts, Raisins and Coconut - stit to mix.
3.) Beat together the Eggs, Brown Sugar and Oil - add the melted Chocolate and mix well - fold in the Carrots - fold in the Flour mixture.
4.) Spoon batter into the prepared pan  - bake 45 minutes or until a tester comes out clean.

Remove from oven - leave to cool in pan for 15 minutes - then transfer to a cooling rack to cool completely.

5.) Beat the Cream Cheese until creamy - add the melted Chocolate and beat until combined - slowly add the Icing Sugar by the cup full, beating all the time, until you have the consistency to your preference.

Pipe or spoon over the cake - either as a full cake or after it has been sliced into bars.

    Carrot cake is also one of family favorite cakes :)
    Never tried this cake with chocolate though - but I like the idea!
