Caramel, Chocolate Chip S'More Bars

These bars were a long time overdue.  I wanted to make them just about every day for the last two weeks, but never seemed to find the time, or something else had come up.

The base is something between a sugar cookie and a shortbread, can not make up my mind which one. Topped with Caramel, Chocolate Chips and mini Marshmallows!

Delicious!  I will definitely make a double batch next time.

Caramel, Chocolate Chip S'More Bars

{about 25 bars - depending on the size you cut!}

1/2 cup Butter, softened
1/2 cup Sugar
1 Extra-Large Egg
2 cups Self-Raising Flour
Pinch of Salt
1/2 can (of a 397g) Caramel Condensed Milk   {Peanut Butter would also be great!}
1 cup Chocolate Chips
1 cup mini Marshmallows

1.) Pre-heat the oven to 180 deg C (350 deg F) - line a baking sheet with baking paper.
2.) Cream the Butter and Sugar together - add the Egg - beat until light and fluffy - add the Flour and Salt - mix to form a dough - pinch off 1/4 of the dough and place in a plastic bag in the freezer compartment.
3.) Press the remaining dough into the lined baking sheet {it might look very thin, but it will rise during baking} - spread the Caramel over the dough and sprinkle the Chocolate Chips over.
4.) Remove the dough from the freezer and grate - sprinkle over the Chocolate Chips - bake for 18 minutes - remove from oven - sprinkle the Marshmallows over and return to the oven until the Marshmallows are puffed and slightly golden  {about another 5 - 7 minutes}

Cool on a wire rack until completely cooled - cut into bars or squares and serve.
