Meat Filled Baked Pancakes

Pancakes are always welcome, sweet or savory - Summer or Winter.  This specific dish can be served hot or cold... in Summer we enjoy it cold and Winter, hot.

This is another recipe from Christelle Erasmus' cookbook GESINSKOS, which I have only adapted a tiny bit.

The pancake recipe is fail proof - really, I made them myself !  Usually I let Roy cook the pancakes as I always make a mess of them, but not with this recipe.

Meat Filled Baked Pancakes

{makes 14 - 16 pancakes}


1 cup Water
1/2 cup Milk
2 Extra-Large Eggs
1 cup Flour
1 t Baking Powder
Pinch of Salt
1 TB Vinegar
Oil, to cook the pancakes


1 Large Onion, chopped
1 TB Oil
500g Ground Beef {Mince}
2 TB Chutney
2 TB Tomato Sauce
1 t dried Rosemary
1 t dried Oregano
1 packet Cream of Mushroom Soup Powder
1/2 cup Water
Salt & Pepper, to taste


1/4 cup Butter, melted
1/4 cup Flour
2 cups Milk
1 1/2 cups Cheddar cheese, grated

Cayenne Pepper
1 - 2 t dried Parsley

1.) PANCAKES : Beat together the Water, Milk and Eggs - add the Flour and Baking Powder slowly, beat until smooth - add the Salt and Vinegar - beat another minute.
2.) Heat a pan until very hot - add a little Oil, heat - spoon batter into the pan and cook until bubbly and pulling away from the sides - turn over and cook another 30 seconds - remove from pan and keep aside - repeat until all the batter is used.
3.) FILLING : Saute the Onion in the Oil until soft and brown - add the Ground Beef, stir-fry until cooked.
4.) Mix together in a small bowl the Chutney, Tomato Sauce, Rosemary, Oregano, Soup and Water - add to the Ground Beef and simmer for 5 - 10 minutes - season with Salt & Pepper to taste.
5.) Pre-heat the oven to 180 deg C (400 deg F) - spray a large oven dish with Spray 'N Cook.
6.) Spoon a heap of filling onto the center of each pancake - fold it over as you would an envelope - place the filled pancakes in the prepared oven dish.
7.) CHEESE SAUCE : Mix the Butter and Flour to form a paste, add the Milk little at a time, scraping the bottom and sides of your microwave bowl or stove pot regularly - microwave 3 - 5 minutes, stirring every 30 seconds {if using a stove pot - stir continuously} until thick - add the Cheddar cheese and stir until the cheese has melted - pour the cheese sauce over the filled and folded pancakes in the oven dish.
8.) Sprinkle with Paprika, Cayenne Pepper and Parsley - bake 20 - 25 minutes until starting to brown.

Serve hot or cold with side vegetables or salads.
