I am a big believer in “bacon makes everything better” . Especially when it comes to green side dishes, as my family absolutely hate anything green, except when it is in a salad.

When I make this Zucchini with Bacon and Onion they are happy and would even have seconds.

Since I started cooking, way back when we got married, I always have colorful side dishes.

For instance, this Zucchini dish would go very well with sweet, caramelized Carrots (see my link at bottom of post) , which is always a hit with my family.

Add to that rice, or mashed potatoes and of course the meat/poultry of the day, and you have a lovely, balanced (both in color and flavor) meal.

This side dish can be made minutes before serving, which is what I normally do – a little stirring and frying and you are set.

I do the slicing in advance though, as that is usually what takes the longest when preparing a meal. Another preference of mine is that the Zucchini with Bacon and Onion, not to stand too long before serving.

The Zucchini will go soft after a while and it is so much better when there is still a tiny bit of crunch to the Zucchini.

Ingredients
  

  • 1 TB Avocado Oil (Garlic Flavor) or Olive Oil
  • 1 cup Lean Bacon Bits
  • 1 Onion thinly sliced
  • 2 cups Baby Zucchini sliced
  • Salt and Black Pepper to taste

Instructions
 

  • Heat the Oil in a large pan – fry the Bacon until done – remove with a slotted spoon and add the Onion to the same pan
  • Saute the Onion until golden – add the Zucchini and stir-fry until just tender – add back the Bacon and heat through
  • Season to taste with Salt and Black Pepper – transfer to a serving dish

Great looking recipe! I love courgettes but my BF isn't so keen. He loves bacon though so could tempt him to the veggies with this dish. Thanks Linda :-)
