I have many green bean recipes. But these Garlicky Green Beans with Feta is by far the best side dish recipe which I make often, at least 3 – 4 times a month.

And that is a lot in our house as I am not one to repeat a dish, side, main or other, in a two week span.

If you do not like garlic, this is not for you, BUT, if you do love your garlic, you will be amazed by how scrumptious this five ingredient Green Bean dish turns out.

I see (and even make one now and then, believe me!) a ton of Green Bean recipes with Bacon as an ingredient. Which is delicious, of course, who does not like Bacon ? But when it comes to choosing a Green Bean dish, my family always request the Garlicky Beans.

The big secret, not really such a huge secret, is to use lots of Butter ! Melt over moderate heat and saute the Garlic gently.

Not too much and not too little. I would say no longer than 3 minutes, and continuous stirring is a must. The Garlic should not brown at all at this stage, but once the Beans are added, it will brown a little.

Any leftover buttery garlic is delicious drizzled over meats and especially mashed potatoes !

Ingredients
  

  • 500 g Fresh Green Beans cut into 2.5cm (one inch) pieces ( 16 oz )
  • 2 t Fresh Garlic crushed
  • ¼ cup Butter
  • Salt and Black Pepper to taste
  • ½ cup Feta Cheese cubed

Instructions
 

  • Cook the Green Beans in lightly salted water over high heat until cooked – drain well
  • Melt the Butter in a skillet and add the Garlic – saute 1 minute – add the Green Beans and stir-fry 2 – 3 minutes – Season to taste with Salt and Black Pepper
  • Sprinkle over the Feta Cheese – stir through gently and remove from heat
