Caramelised Banana Filled Pancakes

Totally delicious !  What can I say ?  I am a sucker for pancakes and just about anything caramelised {sweet and savory, just think caramelised onions ! }

These caramelised Banana filled pancakes can be enjoyed warm or cold and if you fold them the way I did - instant hand food ;-)

I did not want something with too much sauce, just enough to moisten the pancakes and the bananas for all to come together and not leaving you choking. You can always increase the Butter and Sugar to have a bit more sauce.

We had some {very little, but still!} of the caramelised bananas leftover and it was still fine the next morning - which of course I had for breakfast !

Although I made this as a dessert, it is most certainly very appropriate for breakfast as well.

CARAMELISED BANANA FILLED PANCAKES

Serves 4

INGREDIENTS:

4 Large Pancakes   {use your favorite recipe or store bought}
3 TB Butter
4 TB Brown Sugar
4 Bananas, peeled and cut into chunks
1/4 cup Pistachio Nuts, chopped

DIRECTIONS:

1.) Place the Pancakes open on a serving plate.
2.) Melt the Butter in a medium pan over high heat - add the Brown Sugar - cook until the Sugar has dissolved.
3.) Add the Bananas and stir-fry gently for 1 - 2 minutes until caramelised and tender, but be careful not to overcook, otherwise the Bananas will become soggy.
4.) Scoop onto the one half of a pancake - fold over the bottom half and fold over the sides.
5.) Sprinkle with Pistachio Nuts and serve warm or cold.
