Cheesy Haddock Pasta

I do not make fish dishes regularly.  We normally only have fish when we order take-aways, as everyone can then order what they want and it does not have to be fish.  Cheri and Dimitri would usually choose either Calamari or Prawns.

Roy and I enjoyed this recipe so much, that we actually finished off the entire dish {which is enough for 4 servings!} by ourselves.  And Smoked Haddock is one off my favorites.

We have a fresh fish monger close to us, but for this recipe, I used frozen haddock. This is ideal for a busy weeknight and took less than 30 minutes to prepare and cook.

Cheesy Haddock Pasta

{4 servings}

500g Smoked Haddock
600 ml Milk {divided}
1/4 cup Butter
1/4 cup Flour
1 cup Cheddar, grated

500g Pasta, cooked {I used shells}
Parsley, finely chopped, to serve

1.) Place one cup of Milk in a medium pan - add the Haddock - bring to the boil and then turn down the heat - simmer, covered, around 10 minutes until cooked and easy to flake - transfer the fish with a slotted spoon to a bowl/plate and flake - keep warm.
2.) Add the remaining Milk in the pan to the Milk not yet used.
3.) Using the same pan, melt the Butter - add the Flour and stir to form a paste - add the Milk little at a time to the pan - stirring continuously - simmer for 5 - 8 minutes until thickened - remove from heat and stir in the Cheddar cheese until melted.
4.) Add the cooked Pasta to the Sauce, stir through and then add the flaked Haddock.

Serve immediately with Parsley scattered over.

This is a great dish and if you are a Haddock fan, this will not disappoint you !

    1. Lynn, I have never tried it using Salmon, but I think any smoked fish will go well with cheese. {your e-mail was not attached to your comment, hence me replying here} let me know if/when you tried this using Salmon?
