Coconut Cherry Bites

I am still on the cookie baking spree ! These little bites are delicious and a must for coconut lovers...

It took me 5 minutes to get it all mixed up and 5 minutes to roll into small balls - by the time that was done, the oven was ready.  

Coconut Cherry Bites

{recipe makes about 20 cookies}

2 cups Coconut
1/2 cup Sugar
2 Extra-large Egg Whites
100g Glazed Cherries, chopped {any color}
1/2 t Almond Essence
Pinch of Salt
White Chocolate, melted {optional}

1.) Pre-heat the oven to 180 deg C (350 deg F) - line a baking sheet with baking paper.
2.) Dump all the ingredients into a bowl and mix well {it is a dry-ish mixture} - form small 2cm, a little smaller than one inch, balls and place on the lined baking tray - bake for 10 - 15 minutes until they just start to brown - remove from oven and cool completely on a cooling rack.
3.) Drizzle some White Chocolate over the cookies {or dip one half} - chill a few minutes to set.
