This is another recipe I found on Pinterest and have made several times already. Never a flop, just light and fluffy and oh, soooo coconutty !

I have only made two tiny changes to the original recipe for these Coconut Friands.

Before we get on to the recipe … remember our new puppy ?? (who was still nameless in the post)

These Coconut Friands are a coconut lover’s dream come true ! Of which I am most certainly an addict. I just love anything coconut.

Whether it is a sweet treat or used in a savory dish, I would normally over indulge in coconutty treats or dishes. Serve the Friands with a cup of tea when you have a friend over at tea time.

OR, serve as part of a sweet party platter ! They look so good on any display, with or without other sweet treats and usually the first to go as well.

Coconut Friands

Coconut Friands

Yield: 12 Servings
Prep Time: 10 minutes
Bake Time: 20 minutes
Total Time: 30 minutes

Coconut Friands are delicious, feather light Coconut treats made in no time at all ! This is a Coconut-lover's dream treat !

Ingredients

  • 4 large Egg Whites
  • 1 1/2 cups Fine Desiccated Coconut (unsweetened)
  • 2/3 cup Sugar
  • 1/2 cup Cake Flour
  • 1/2 t Vanilla Essence
  • 1/4 t Salt
  • 1/2 cup) Unsalted Butter, melted
  • 6 Glace Cherries, halved

Instructions

1.) Pre-heat oven to 180 deg C (350 deg F) and lightly spray a 12 hole muffin pan with cooking oil

2.) Beat the Egg whites until light and smooth but still a bit foamy

3.) Add the remaining ingredients (except the Cherries) and mix gently

4.) Fill the muffin pan equally with the mixture

5.) Add half a Cherry on top and bake 20 – 25 minutes until the edges are browned.

6.) Remove from oven, cool in pan for 5 minutes and transfer to a wire-rack until totally cool.
