Coconut Friands

This is another recipe I found on Pinterest and have made several times already. Never a flop, just light and fluffy and oh, soooo coconutty !

I've only made two tiny changes to the original recipe for these Coconut Friands.

Before we get on to the recipe ... remember our new puppy ?? (who was still nameless in the post)

No more nameless - Meet REX ! Very cute, lovable and already taking over the household and everybody's hearts!

Coconut Friands


4 large Egg Whites
1 1/2 cups Fine dried Coconut (unsweetened)
2/3 cup Sugar
1/2 cup Cake Flour
1/2 t Vanilla Essence
1/4 t Salt
1 stick (125g /  1/2 cup) Unsalted Butter, melted
6 Maraschino Cherries, halved


1.) Pre-heat oven to 180 deg C (350 deg F) and lightly spray a muffin pan with Spray 'N Cook.
2.) Beat the Egg whites until light and smooth but still a bit foamy.
3.) Add the rest of the ingredients (except the Cherries) and mix gently.
4.) Fill the muffin pan (12 hole) equally with the mixture.
5.) Add half a Cherry on top and bake 20 - 25 minutes until the edges are browned.
6.) Remove from oven, cool in pan for 5 minutes and transfer to a wire-rack until totally cool.

These won't last long, but if stored, use a sealed container, it will still be good for another day or two!
