Whether you're feeding a crowd or only a few family members, these very tasty Breakfast Burritos are ideal for brunches (12 servings at one time or half the recipe easily !)
Pre-heat the oven to 180 deg C (350 deg F) – spray 2 large oven dishes with cooking oil
Chop the cooked Bacon and set aside
Beat together the Eggs, Milk, Salt and Pepper – set aside
Melt 1 tablespoon Butter in a large skillet – saute the Onion and Peppers until soft – reduce heat to low – add the remaining Butter and the Egg mixture – stir-fry until the Eggs are scrambled and still a little moist – stir through the Bacon
Spoon mixture onto each Tortilla and fold over Burrito style – arrange 6 each in the prepared oven dishes
Pour the Salsa over – sprinkle with Cheese – cover with aluminum foil and bake 25 minutes or until the Cheese has melted
