Ingredients

Chicken Fillets
halved and flattened evenly
MARINADE:

Lime Peel
finely grated

Fresh Rosemary
chopped

Fresh Lime Juice

Olive Oil
extra virgin

Fresh Garlic
crushed

TO FINISH:
Black Pepper
to taste
Lime
wedges/slices - to serve
Instructions
Place the Chicken Fillets in a marinade container
Combine all the Marinade ingredients in a bowl – mix well – pour over the Chicken and marinate 2 – 4 hours, turning the marinade bowl regularly
Remove the Chicken from the marinade – season to taste with Black Pepper and grill, brushing 2 – 3 times with the leftover marinade
