SALAD:
250
g
Penne Pasta
( 8 oz )

Avocado
peeled, stoned and cubed

small
Red Apples
sliced

Lemon Juice
2

Cooked Chicken Fillets
cubed
3
cups
Mixed Salad Greens
(your choice)
DRESSING:
⅓
cup
Sour Cream
3
TB
Canola Oil
2
TB
Red Wine Vinegar
Instructions
SALAD:
Cook, drain and cool the Pasta as per the instructions on the packet
Sprinkle the Lemon Juice over the Avocado and the Apples to prevent them from discoloring
Place the Pasta, Avocado, Apples, Chicken and Salad Greens in a large mixing bowl
DRESSING:
Combine all the dressing ingredients and whisk lightly - pour
half
of the dressing over the salad and toss well – transfer to a serving bowl
Drizzle over the remaining dressing and keep chilled until ready to serve
