Taco Pie with Mashed Potato Crust is a deliciously different version of this popular dish, with all the trimmings and the recipe is enough for 6 adult servings
2 ½cupsMashed Potatoescooked (see note** above recipe in post)
1packetTaco Seasoningdivided
1TBOlive Oil
450gLean Ground Beef( 1 pound )
½cupOnionchopped
½cupSalsa
1cupLettuceshredded
1Tomatodiced
1 ½cupsCheddar Cheesegrated
1Avocadodiced
Salt and Black Pepperto taste
Instructions
Pre-heat the oven to 180 deg C (350 deg F) – spray a large pie dish with cooking oil
Mix the Mashed Potatoes with 2 tablespoons of the Taco Seasoning – press into the pie dish, bottom and sides – bake 10 minutes until just brown
Heat the Olive Oil in a pan – cook the Ground Beef and the Onions until done – drain excess liquid if necessary
Add the remaining Taco Seasoning and Salsa – cook until bubbly {add more Salt if you prefer} – pour the meat mixture into the Potato crust – bake 15 minutes – remove from the oven and let cool for 5 minutes
Sprinkle the Cheese over the meat, followed by the Lettuce, Tomato, Sour Cream and Avocado
