SALAD:
500
g
Pasta Shells
( 16 oz )

Celery Ribs
thinly sliced

bunch
Spring Onions
sliced – only white parts
250
g
Smoked Salmon
slices, torn into pieces

cup
Pistachio Nuts
shelled and chopped
1 ½
cups
Strawberries
hulled and quartered

handful
Arugula
DRESSING:

TB
Red Wine Vinegar
½
cup
Olive Oil
extra virgin

Fresh Garlic
crushed

English Mustard Powder

Honey
Instructions
Cook the Pasta as per the instructions on the packet, drain and place in a large mixing bowl
Combine all ingredients for the
DRESSING
until well mixed – pour half of the dressing over the warm Pasta – stir through and let cool completely
Add the Celery, Onions, Salmon, Nuts, Strawberries and Arugula to the Pasta – stir gently to mix and transfer to a serving bowl
Drizzle with the remaining Dressing and serve
