Tex-Mex Burgers are juicy delicious - topped with a spicy Guacamole and a quick homemade Onion Pickle - you decide how hot ( or not! ) you like your burgers !
Combine all the ingredients for the Patties in a mixing bowl – mix well, form into 4 patties and chill for 20 – 25 minutes
GUACAMOLE:
Mash together all the ingredients for the Guacamole in a small mixing bowl – set aside until needed
RED ONION PICKLE:
Place all the ingredients for the Red Onion Pickle in a medium saucepan – bring to the boil and continue to boil for 2 minutes – remove from the heat and let cool in the liquid – drain before using
TO FINISH:
Cook the Patties over the coals, skillet or on a George Foreman griller
Divide the Cottage Cheese in 4 and spread over the bottom Burger buns – top with Lettuce, Patty, Guacamole and end with a scoop of Red Onion Pickle - top with Burger bun
