Cinnamon Orange Bundt Pudding

Best comforting dessert - steamed (not traditionally baked) Cinnamon Orange Bundt Pudding

This Cinnamon Orange Bundt Pudding may look like a cake, but it is most definitely a pudding !

Moist and most delicious, especially with custard or ice-cream all melted into one delight. I love the pudding as I am a huge fan of steamed puddings. Not sure why, but it just tends to have that something special which most traditional baked puddings lack.

The Cinnamon and Orange flavors works so well together (fresh orange juice is definitely a must), making this steamed pudding one of the best to serve on a real cold night.

Cinnamon Orange Bundt Pudding

8 Servings

1 1/2 cups Flour
1/4 cup Light Brown Sugar
1/3 cup Butter
1 t Baking Soda
2 t Ground Ginger
1 Egg
1 TB Golden Syrup    {or Corn Syrup}
1 Orange, zest and juice
1/2 t Vanilla Essence
1/2 cup Milk
2 t Ground Cinnamon

Custard, to serve   {optional}
Extra Cinnamon, to dust   {optional}

1.) Pre-heat oven to 180 deg C (350 deg F) - spray a smallish bundt pan with cooking oil {larger pan will also do}
2.) Mix all the ingredients, except Custard and extra Cinnamon, in a medium mixing bowl - beating on low - pour into prepared bundt pan and cover tightly with aluminum foil.
3.) Place bundt pan in a roast pan - add boiling water to reach up to the top of the batter in the bundt pan - or close enough.
4.) Bake 45 minutes - remove from the oven - carefully remove the aluminum foil {watch out for the steam escaping} - let rest 10 minutes - turn out onto a serving plate.

Serve warm, drizzled with Custard and dusted with extra Cinnamon if using.  Ice-cream is also delicious with this steamed pudding.
