Crunchy Chicken Florentine

This Crunchy Chicken Florentine is such a wonderful, creamy meal and I just love the bit of crunchy layer at the top.

It is the perfect week night dinner and ever so quick and easy to throw together, especially if you buy already cooked {smoked} chicken or a rotisserie chicken from the supermarket.

Since we eat a lot, and I mean a heck of a lot, of chicken, I usually cook extra and keep it sealed in the refrigerator to use in a day or two.

I have seen many variations of this particular kind of Chicken Florentine, but have finally, after a couple of recipe adaptions, found that we like this version most. The ingredients are just right, saucy, but not overly so, enough to scoop over rice or mashed potatoes though.

The crunchy topping is not dry, therefore by sprinkling I really mean, take teaspoonfuls of the crunch and drop it all over the top of the Chicken dish. No need to be perfect and the lumpier it is, the better.

I have added Salt as an optional in the ingredients, but I have found that the dish is salty enough for my family's taste.  The fresher the Spinach, the better the Chicken Florentine will turn out. Frozen spinach did not work as well the first time I made the dish.


Crunchy Chicken Florentine



6 Servings

INGREDIENTS:

1 can (410g) Cream of Mushroom Soup
1/2 can Milk   {use the Soup can to measure}
1 cup Sour Cream
Salt, to taste   {optional}
500g Chicken Fillets, cooked, cubed
2 cups Fresh Spinach, chopped
1 cup Mozzarella Cheese, grated
1/2 cup Butter, melted
16 Ritz Crackers, crushed {Salticrax Crackers}
1 TB Poppyseed
1 t Fresh Garlic, crushed

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 20 x 30cm oven dish with cooking oil.
2.) Combine the Soup, Milk and Sour Cream in a mixing bowl - add Salt {optional} - pour half of this mixture onto the bottom of the prepared oven dish.
3.) Scoop the Chicken over the mixture evenly, followed by the Spinach.
4.) Pour the remaining Soup mixture over the Spinach - sprinkle the Mozzarella over.
5.) Combine the Butter, crushed Crackers, Poppyseed and Garlic in a small mixing bowl - sprinkle over the Mozzarella - bake 25 - 30 minutes or until the crumbs are golden brown and the sauce bubbly.
Serve with mashed potatoes or rice and a side or two.
