Rocky Road Mousse



Rocky Road, as I understand it, could be anything !  Main thing is to start off with a base as I did here with the mousse.

Another option could be chocolate.  Then you just add whatever it is you like to make it rocky.  It shouldn't be something which will go soft, or disappear altogether.

The recipe I am sharing today, was really everything I had a craving for the other night, therefore - my version of a Rocky Road Mousse!

Make no mistake, this was heavenly, not only delicious ... pity there was no leftovers :-(

ROCKY ROAD MOUSSE

{6 servings}

1 box Butterscotch Instant Pudding  {I used the Jello brand}
1 3/4 cups Milk    {use a little less here for a firmer pudding} 
1 cup Fresh Cream    {whipping cream/double cream}     
1/2 cup Marshmallow Bits  
1 Large slab Kit-Kat, the white chocolate covered type, chopped into bite sized pieces
6 - 8 Glace Cherries, chopped
1/2 cup Tennis Biscuit crumbs      {or Graham Cracker crumbs}
1/4 cup Chocolate Chips

1.) Beat the Pudding and Milk together for 1 1/2 - 2 minutes.
2.) Whip the Fresh Cream until stiff peaks form.
3.) Beat the Pudding mixture and the Whipped Cream together on low speed until just combined.
4.) Add the Marshmallow Bits, Kit-Kat pieces and the chopped Cherries to the cream mixture - stir to mix.
5.) Divide the Tennis biscuit crumbs between 6 {1/2 cup size} serving bowls - place on the bottom of the bowls.
6.) Top up with the Cream mixture and finally sprinkle the Chocolate chips over.

This can be served immediately.

  1. Omg Linda.. I just love marshmallows. This looks way too good- I think I'd use vanilla pudding though. I'm gonna make some of these on my next movie night :)
