Ingredients

Baby Potatoes
peeled ( 2 pounds )

Avocados
peeled and pitted
3
TB
Lemon Juice
Salt and Black Pepper
to taste
¼
cup
Chives
chopped
Instructions
Boil the Potatoes in lightly salted water until just tender – drain and transfer to a mixing bowl
Blitz the Avocado in a blender until smooth – add the Lemon Juice and give it another quick blitz – pour over the Potatoes ( warm or cold )
Season to taste with Salt and Pepper – transfer to a serving dish
Sprinkle over the Chives
