WHITE CHOCOLATE FLUFF:

White Chocolate
good eating quality ( 5 oz )

Milk

Egg Whites

Lemon Juice

Fresh Cream
(whipping cream/double cream)

Caster Sugar
Superfine Sugar
OPTIONAL:
Silver Petit Dragees
to decorate
Instructions
Melt the White Chocolate and quickly stir in the Milk
Beat together the Egg Whites and Lemon Juice until stiff – fold into the Chocolate mixture
Beat together the Cream and Caster Sugar (Sugarfine Sugar) until soft peaks form – fold into the Chocolate mixture
Pour into serving glasses – chill for 20 minutes – decorate with the Silver Dragees (if using)
Chill another hour or until you are ready to serve (See Note below)
Notes
The Chocolate Fluff can be made up to 3 days in advance (cover serving glasses/bowls with cling wrap and only decorate just before serving)
