Pre-heat the oven to 180 deg C (350 deg F) – spray 2 x six hole mini bread pans with cooking oil
Mix the Flour, Cheddar (keep 1/2 cup aside), Corn, Onion, Bacon and Buttermilk until well mixed – spoon into the prepared pans – sprinkle with the remaining Cheddar and Paprika – bake 1 hour or until well risen and cooked through
Remove the breads from the oven – let cool in the pans for 5 minutes – remove -sprinkle with Spring Onions and serve with or without Butter
Meanwhile, heat the Oil and saute the Onion until soft – add the Beef and Chilies – stir-fry until cooked
Add the Tomatoes and Sugar – simmer for 10 – 15 minutes
Season to taste with Salt and Pepper and serve with Avocado and Sour Cream on the side alongside with the Mini Cheese Breads
