Pre-heat the oven to 180 deg C (350 deg F) – spray a large pie dish with cooking oil
Melt the Butter in a large microwavable jug or bowl – stir in the Flour to form a paste – add the Milk bit-by-bit, stirring and scraping the sides – microwave on HIGH, stirring every minute until the sauce is thick
Add the Eggs, Cheese, Ham and Mushrooms to the sauce – stir until combined – pour mixture into the prepared pie dish – bake 25 – 30 minutes or until the center has set
Remove from the oven, let stand for 5 minutes, slice and serve warm
