Mascarpone Filled Mini Pancakes Stacks are perfect for a special breakfast, brunch or even a sweet treat. Perfect with Strawberries and drizzled with Honey!
Use a cookie cutter ( 5cm / 2 inch diameter ) and cut out 24 mini round pancakes from the 6 pancakes
Top one mini pancake with one teaspoon Mascarpone, place another mini pancake over the Mascarpone, top with another one teaspoon Mascarpone and repeat once more ending with a mini Pancake
You will now have 4 mini pancakes with 3 Mascarpone filling layers
Arrange a Strawberry half and a Mint leaf on top - push through a wooden skewer to hold the stack together - carefully transfer to a serving plate
Serve drizzled with Honey

Use your favorite pancake batter (crumpet or flapjack batters work as well) - Pancake size should be no less than 15 cm ( 3 inches ) in diameter
The ideal thickness for the pancakes in these stacks are 5 millimeters, if you are using a thicker pancake, reduce the layers by one
Mascarpone can be flavored (sweetened) and/or colored if you prefer
Honey can be substituted with Maple Syrup or even a Strawberry Syrup
