4TBRed Curry Paste
1 ¼cupQuinoa
1can410g Chopped Tomatoes
4cupsChicken Stock
3TBRoasted Salted Cashew Nuts
Handful Fresh Cilantrochopped
Instructions
Heat the Oil and saute the Onions until soft and golden – remove from pan and keep aside
Add the Chicken to the same pan – Brown all over – add the Red Curry Paste and the Quinoa – sizzle for a minute or two
Add back the Onions, together with the Tomatoes and Chicken Stock – bring to the boil then lower heat and simmer 25 minutes until the Quinoa is tender and the mixture is saucy
Stir in the Cashew Nuts and the Cilantro
