BASIL GREEN BEANS:
2TBUnsalted Butter
1Onionchopped or sliced
2tGarliccrushed
2cupsGreen Beans
1TBBasilchopped finely

SWEET HONEY CARROTS:
1 ½cupsCarrotsI use small cubes
2TBUnsalted Buttermelted
2TBHoney
1TBCaster SugarSuperfine Sugar
1TBRed Wine Vinegar
Salt and Pepperto taste
BAKED POTATOES:
6Potatoesmedium, scrubbed clean and pierced several times
1TBOlive Oil
1tCoarse Sea Salt
Sour Creamto serve (optional)
Spring Onionschopped, to serve (optional)
Instructions
HONG KONG CHICKEN: Place the Chicken Fillets on the bottom of a large slow-cooker
Combine the remaining ingredients and pour over the Chicken
BASIL GREEN BEANS: Saute the Onion and Garlic in the Butter until soft, add the Green Beans and Basil – stir-fry 1 minute
Remove from heat and season to taste
Triple fold a large enough piece of aluminum foil – place the Beans in the center and fold all sides upwards (to form a bowl) and then close the tops tightly, so that no juices will leak out – keep aside
SWEET HONEY CARROTS: Place the Carrots on a triple folded piece of aluminum foil {as per the beans} – fold slightly to resemble a bowl
Combine the remaining ingredients and pour over the Carrots – close the aluminum foil – keep aside
BAKED POTATOES: Rub the Potatoes with Olive Oil and sprinkle generously with coarse Sea Salt
Triple fold a large piece of aluminum foil again – place the Potatoes in the center and fold close
Gently but tightly folded
How To Layer The Slow-Cooker Dinner:
1.) Place the Potato package on top of the Chicken
2.) Followed by the packet of Beans (see note in post re Green Beans) and the packet of Carrots
3.) All fits nicely in the Slow-Cooker
4.) Cover with the lid and cook on HIGH for 4 -5 hours or 7 – 8 hours on LOW
