Salt and Black Pepperto taste
COLESLAW:
250gColeslaw Mix8 oz
½Red Onionthinly sliced
2Spring Onionschopped (scallions)
¼cupMayonnaise
½cupPlain Yogurt
TO FINISH:
8large Flour Tortillas
Instructions
CHICKEN: Heat the Avocado Oil over high heat in a large pan – add the Chicken, Garlic and Soy Sauce – stir-fry until done – add the Pineapple pieces, Sweet and Sour Sauce and season with Salt and Black Pepper – cook another 2 minutes
COLESLAW: Mix together the Coleslaw Mix, Red Onion and Spring Onions – combine the Mayonnaise and Yogurt – mix into the Coleslaw
TO FINISH: Place a generous scoop of Coleslaw in the center of each Tortilla – top with the Chicken (warm or cold) and roll up - serve
