1.) Pre-heat the oven to 180 deg C (350 deg F) – spray a bundt pan with cooking oil or grease very well
2.) Syrup: Heat the Caster Sugar, Water and Vanilla – bring to the boil, stirring until the Sugar has dissolved – add the Orange slices – simmer 10 minutes, re-arranging the slices now and then – remove from heat and set aside
3.) Cake: Beat together the Eggs, Caster Sugar and Vanilla until fluffy and thick – fold in the Flour and Polenta
4.) Remove the Orange slices from the syrup {keep the syrup} and arrange them on the bottom and slightly up the wall of the prepared bundt pan (some might overlap) – pour the Cake batter over the Orange slices
5.) Pour the melted Chocolate over the batter and use a butter knife to gently swirl through the Chocolate and Cake batter – bake 35 – 40 minutes or until a tester comes out clean
6.) Let cool in the pan for 5 minutes – turn out onto a cooling rack to cool completely
7.) Transfer to a serving plate and drizzle over the retained Syrup – heat a little if it has gone thick
