Crispy Provolone Salad only takes a couple of minutes to make and is perfect for when you only need a crunchy side salad to especially rich dinner (or lunch!) meals.

Salad:

Crispy Lettuce
torn into smaller pieces ( 8 oz )

Provolone Cheese
grated

cup
Cherry Tomatoes
I prefer Italian, halved
Dressing:
¼
cup
Vegetable Oil
¼
cup
Extra-Virgin Olive Oil
¼
cup
Lemon Juice
freshly squeezed

Lemon Peel
finely grated

Fresh Garlic
crushed

Black Pepper

Salt
Instructions
1.) Toss the Lettuce, Provolone and Tomatoes in a salad bowl
2.) Combine all the dressing ingredients well (I use a small plastic bowl with a lid and just shake it all up)
3.) Drizzle the dressing over the Lettuce mixture, place in refrigerator to chill and serve
