Tuna in Brine/Water
drained ( 1 can = 170gr / 6 oz )

Bunch Cilantro
roughly chopped

Tortilla Chips
plain or cheese ( 200g = 7 oz )

Cheddar Cheese
grated

Guacamole
( homemade or store-bought )

Spring Onions

Green Chilies

Coriander Sprigs
to garnish ( optional )
Instructions
Pre-heat the oven to 220 deg C ( 440 deg F ) - spray a 15 x 30 cm ( 3 x 6 inch ) ovenproof dish with cooking oil
Heat the Oil in a large skillet - saute the Onion until soft - add the Garlic and cook another minute
Stir in the Tomatoes, Sugar, Tuna and chopped Cilantro - cook 2 minutes - check seasoning and remove from heat
Place half of the Tortilla Chips on the bottom of the oven dish - spoon over half the Tuna mixture, followed by half the Cheese - repeat the layers
Bake 10 minutes or until the Cheese has melted - remove from the oven
Dollop over the Guacamole and sprinkle over the Spring Onions and Chilies. Garnish with Coriander sprigs and serve immediately
Notes
The Tortilla chips will soften - this is supposed to happen, to create almost a lasagna like dish
