3cupsCaster Sugar(finer than plain Sugar, but not as fine as powdered sugar)
4tRosewater
Pink Food Coloring
TO DUST:
3TBIcing Sugar
1tCornflour(Cornstarch)
Instructions
Using a large saucepan – slowly heat the Gelatin, Water, Caster Sugar and Rosewater, stirring continuously, until the Sugar and Gelatin have dissolved completely – use a wet (water) pastry brush to brush away any sugar crystals which might build up against the walls of the saucepan
Bring to boiling point, then reduce heat and slowly simmer, without stirring, for 20 minutes
Meanwhile, spray a 20 centimeter square {8 inch square} heat proof dish with cooking oil – bottom and up the sides
Remove the Turkish Delight mixture from the heat – add a drop or two of Food Coloring and stir – add more until you are happy with the color – pour the mixture into the prepared dish
Cover with cling wrap and leave to set at room temperature for 24 hours
Once completely set, use a sharp, wet knife and slice into small candy sized pieces
Combine the Icing Sugar and Cornflour – cover the candies and you are done
