Packed Brown Sugar
( I use Demerara Sugar )

Butter
melted

Eggs

Vanilla Essence

Flour

Pecan Nuts
finely chopped

Instructions
Pre-heat oven to 190 deg C (375 deg F) – spray mini muffin pans with cooking oil
Beat together the Brown Sugar, Butter, Eggs and Vanilla until the mixture thickens – add the Flour and beat another 30 seconds until well combined
Stir in the chopped Pecan Nuts and spoon into the prepared pans – fill each muffin hole about 3/4
Top with Pecan halves {or quarters} – bake 8 – 10 minutes until golden and slightly puffed
Remove from the oven – let cool a minute in the pan – transfer to a cooling rack and cool completely
