Chicken Parma and Avocado Salad is a delicious, filling Salad which is perfect for lunch or light dinner on a warm evening night ! So quick to make, especially if you have leftover rotisserie chicken on hand.

  • 2 handfuls Mixed Herb Salad Leaves
  • 3 Chicken Fillets cooked and cubed
  • 1/2 cup Feta Cheese cubed or crumbled
  • 1 Avocado peeled, stoned and cubed
  • 10 slices Parma Ham (or Black Forest Ham)
  • 1/2 cup Cashew Nuts toasted or not
  • 1 TB Balsamic Vinegar
  • 2 TB Olive Oil extra-virgin
  • 1/2 TB Honey
  • 1 t Dijon Mustard
  • Salt and Black Pepper to taste
  1. Arrange the Salad Leaves on a serving platter – toss together the Chicken, Feta, Avocado and Parma Ham – scoop over the Salad Leaves – sprinkle over the Cashew Nuts

  1. Combine the Dressing ingredients – whisk well – drizzle over the Salad
