Chicken Parma and Avocado Salad is a delicious, filling Salad which is perfect for lunch or light dinner on a warm evening night ! So quick to make, especially if you have leftover rotisserie chicken on hand.

Ingredients
SALAD:
2handfulsMixed Herb Salad Leaves
3Chicken Filletscooked and cubed
1/2cupFeta Cheesecubed or crumbled
1Avocadopeeled, stoned and cubed
10slicesParma Ham(or Black Forest Ham)
1/2cupCashew Nutstoasted or not
DRESSING:
1TBBalsamic Vinegar
2TBOlive Oilextra-virgin
1/2TBHoney
1tDijon Mustard
Salt and Black Pepperto taste
Instructions
SALAD:
Arrange the Salad Leaves on a serving platter – toss together the Chicken, Feta, Avocado and Parma Ham – scoop over the Salad Leaves – sprinkle over the Cashew Nuts
DRESSING:
Combine the Dressing ingredients – whisk well – drizzle over the Salad
