Crunchy Chicken Florentine is cheesy and smothered in a creamy Spinach/Mushroom sauce with a delicious, easy crunchy topping - perfect week night dinner.
Pre-heat the oven to 180 deg C (350 deg F) – spray a 20 x 30cm ( 9 x 12 inch ) oven dish with cooking oil
Combine the Soup, Milk and Sour Cream in a mixing bowl – add Salt (optional) – pour half of this mixture onto the bottom of the prepared oven dish
Scoop the Chicken over the mixture evenly, followed by the Spinach
Pour the remaining Soup mixture over the Spinach – sprinkle the Mozzarella over
Combine the Butter, crushed Crackers, Poppyseed and Garlic in a small mixing bowl – sprinkle over the Mozzarella – bake 25 – 30 minutes or until the crumbs are golden brown and the sauce bubbly
