1Green Bell Pepperchopped
1Red Bell Pepperchopped
1-2Green Chiliesfinely chopped
3Tomatoesquartered
1can (410g)Red Kidney Beansdrained and rinsed
1tGround Cumin
1tPaprika
Salt and Black Pepperto taste
Parsleychopped, to garnish
Instructions
In a large skillet heat the Butter and Oil until bubbly – stir-fry the Potatoes, Onion, Peppers and Chilies 5 minutes – transfer to Slow-Cooker and set on LOW
Add the Tomatoes, Beans, Cumin and Paprika to the Vegetable mixture in the Slow-Cooker – season to taste with Salt and Black Pepper and stir through
Cook on LOW overnight with a maximum of 9 hours
