Place the Water in a small bowl – sprinkle over the Gelatin and let stand until spongy ( 3 - 5 minutes )
Meanwhile, in a small saucepan, heat the Sugar and Water – bring to the boil, turn down the heat to medium and let simmer until the Sugar has dissolved and the mixture is syrupy
Place the Cornflour in a small bowl – add a little of the Sugar Syrup and mix until a paste forms – now add the Cornflour paste to the Syrup – simmer whilst stirring continuously – stir in the Gelatin – keep stirring until the Gelatin has dissolved – remove from heat and let cool 10 minutes – add the Vanilla and stir well – cool completely
Whip the Cream until stiff peaks form – slowly add the Vanilla/Syrup mixture and fold through gently
TO SERVE:
Mix a little Honey and Lemon Juice – brush over the Pineapple and grill, using a health griller, George Foreman grill or however you prefer

Serve the Dip at room temperature (chilling will harden the Dip, but 30 minutes out of the refrigerator will soften it again) with the grilled Pineapple
