COLESLAW:

Red Apple
cored and grated

Cabbage
shredded

Carrots
peeled and shaved into ribbons

Onion
finely sliced
1
Lime
juice and zest

Sugar

Olive Oil
extra virgin
SPICY CHICKEN:

Chicken Fillets
butterflied

Olive Oil
extra virgin

Chili Flakes

Ground Cinnamon
Salt and Black Pepper
to taste
Instructions
COLESLAW:
Mix together the Apple, Cabbage, Carrots and Onion in a large bowl
Combine the Juice and Zest of the Lime, Sugar and Olive Oil – mix in with the Cabbage mixture
SPICY CHICKEN:
Combine the Olive Oil, Garlic, Chili Flakes(if using), Cumin and Cinnamon to form a paste
Rub the Chicken Fillets with the mixture and season to taste with Salt and Black Pepper
Use a griddle pan / health grill / barbecue and cook each side of the chicken until done – approximately 5 minutes per side
