It is almost weekend !  And if you are not entertaining, or going out to dinner, a cookout or something along that line, you most likely just want to be home, relaxing. Anyhow, that is how it works in our household.

Making this Fall Chicken and Apple Salad is perfect to serve for lunch on a Saturday or a light dinner, depending on what your weather is up to this weekend.

My salad series is coming to an end and I think besides this Chicken and Mango Salad, I only have one more to share with you for the moment.

I make this Chicken salad very often as it is totally one of my family’s favorites. We love just about any salad with Chicken but add Mango ! Man, oh, man … to die for delicious. Unfortunately, even though Mangoes are mostly available, the standard has most definitely dropped in SA.

It looks like the Mangoes are being picked way too early and no matter what you do or how long you wait, it never seems to ripen, which in the end lands in the garbage, which I so hate, not only wasting money, but a good fruit as well {if it was taken care of properly}. I now only buy Mangoes which are ready to eat immediately and most of the time, I’d make this Chicken and Mango Salad, or some kind of dessert – Mango smoothies are also delicious and always welcome.

I add two types of cheeses to this salad, but alternate the Camembert with Brie now and then. Feta is always a must as we are huge fans of Feta Cheese.

You can use any kind of Nuts, mixed or only one type, I like to use up bits I have left in packets, in salads or in a dish where it does not really matter which you use.

Same goes for the Chicken, use leftover cooked chicken, store-bought rotisserie or pick up a small pack of smoked chicken at the deli.

Chicken and Mango Salad

INGREDIENTS:

2 Handfuls Crisp Lettuce, torn
1 cup Baby Tomatoes, halved
1 Mango, peeled, stoned and cubed
1 Green Bell Pepper, thinly sliced
1/2 Red Onion, sliced
3 – 4 Camembert slices, cut into smaller pieces
1 Round Feta Cheese, cubed
1/2 cup Mixed Nuts
2 Chicken Fillets, cooked and sliced
1/4 cup Italian Salad Dressing

DIRECTIONS:

1.) Layer the Lettuce on a large serving plate.
2.) Toss together the remaining ingredients, except the Dressing – arrange over the Lettuce.
3.) Drizzle over the Dressing just before serving.

Serve for lunch or as a light dinner, especially if you already had a rich, filling lunch earlier. Add a crusty dinner roll and you have one very tasty meal.

Feta and Strawberry Chicken Salad

If you have been following With A Blast for a while now, you might have noticed that I share bunches of salad recipes. We practically live on salads, either as a light dinner, or a side when we have a barbecue which means all year round.

Feta and Strawberry Chicken Salad makes a wonderful, and quick, light dinner and my family loves all the ingredients. With a little experimenting here and there, I add, decrease or omit ingredients until we are all happy with the final meal.

Even though we still have another 2 weeks of Winter in South-Africa, {and I say Winter only because the calendar shows that it is still Winter !} we are already having Summer temperatures. Seems like yet another year where we’ll skip Spring altogether, as I remember last year was the same, early Summer temperatures.

I don’t know about where you live, but we are so fortunate in SA, and especially in Gauteng. This year for instance we only had 2, maybe 3 weeks of really cold weather and our Summers are not that bad as well…. even though I complain about the heat.

You can have this Chicken Salad, loaded with Strawberries and more, ready in minutes. Use store-bought Smoked Chicken Fillets {breasts} which can be found at the Deli counters of most stores. We have a Feinschmecker only minutes away from us and they sell the most delicious Deli meats, sausages and ready-cooked Eisbeins, which Roy just loves.

Don’t fret too much if you can not find fresh Watercress, baby Spinach leaves will do just as well in this recipe.

Feta and Strawberry Chicken Salad

4 – 6 Servings

INGREDIENTS:

Dressing:

Zest of 1 Lemon, finely grated
1/2 cup Honey
1/2 cup Olive Oil
Salt and Black Pepper, to taste

Salad:

2 cups Strawberries, hulled and sliced
Handful Fresh Watercress
Handful Fresh Arugula
1 cup Celery, chopped
1 Round Feta Cheese,sliced or cubed
4 Smoked Chicken Fillets, thinly sliced {I use Feinschmecker}
1 t Poppy Seeds, to garnish {optional}

DIRECTIONS:

1.) Combine the ingredients for the dressing in a small bowl.
2.) Place the Strawberries in a medium bowl – pour the dressing over the Strawberries and let stand 15 minutes – drain the Strawberries {keep the leftover dressing}.
3.) Toss together the Strawberries, Watercress, Arugula, Celery and Feta Cheese – transfer to a serving dish or individual plates – top with the sliced Chicken.
4.) Drizzle over the remaining dressing and garnish with Poppy Seeds {if using}.

Serve immediately. A Ciabata roll is the perfect partner with this salad for lunch or a light dinner.

I shared the recipe for this refreshing, yet filling Pasta Chicken and Avocado Salad over at A Mind “Full” Mom a few weeks ago and now share it here on the blog as well, in case you missed it.

Chicken, as a meat in our salads, is one of my family’s favorite requests and I also love the idea of using Chicken, as you can use just cooked Chicken, rotisserie Chicken or any leftover Chicken you might have from a previous meal. And it does not necessarily mean you have to use the leftovers from last night’s dinner.

Sealed in a container and kept in the refrigerator for at least 2 days will ensure your leftover Chicken is still fresh and perfect to use in a salad.

I am not one to layer all salads perfectly, simply tossed together salads look just as delicious as neatly layered ones, and a glass bowl is a great idea to have a peak at all the ingredients.

To put together the salad takes only minutes, which makes this the perfect lunch to serve after school – not too rich, but filling enough to get the kids, and yourself, through to dinner time.

Served in larger portions with a dinner roll on the side, is also the ideal light dinner.

4 Servings (adult portions)

INGREDIENTS:

250g Penne Pasta
1 Avocado, peeled, stoned and cubed
2 Red Apples, small, sliced
1 TB Lemon Juice
2 cups Cooked Chicken Fillets, cubed
3 cups Mixed Salad Greens (your choice)

Dressing:

1/3 cup Sour Cream
3 TB Canola Oil
2 TB Red Wine Vinegar

DIRECTIONS:

1.) Cook, drain and cool the Pasta as per the instructions on the packet.
2.) Sprinkle the Lemon Juice over the Avocado and the Apples to prevent them from discoloring.
3.) Place the Pasta, Avocado, Apples, Chicken and Salad Greens in a large mixing bowl – pour over half of the dressing and toss well – transfer to a serving bowl.
4.) Drizzle over the remaining dressing and keep chilled until ready to serve.

Serve as lunch or a light dinner on a hot Summer day.

I hope you are not fed up {pun intended !} of all the salad recipes I share lately. Today I have a recipe for a Chicken Parma and Avocado Salad which I have to list at the top of all my favorites ever.

The salad is perfect for lunch and filling enough to serve for dinner as well. You might want to add a nice, fresh, crusty dinner roll, but other than that, your dinner is sorted.

You can use either Parma Ham or Black Forest as both of these gourmet deli meats go very well with the Chicken and the rest of the ingredients.

Chicken Parma and Avocado Salad

We are all huge Avocado lovers and I actually have a small bowl with some extra Avocado cubes when I serve this Chicken Salad or any other salad with Avocado. My family reckons I do not add enough, and I tend to agree with them, but visually, I like any food in general, to have a sort of balance, if you know what I mean?

I also never toast Cashew Nuts as Cheri and I just love the raw Cashews and eat them by the handfuls during the day. If you prefer toasted, go for it !

Chicken Parma and Avocado Salad

Now, as I mentioned, this Chicken Parma and Avocado Salad can be made using Parma ham which I normally do, but well, since I received a packet of Smoked Black Forest Ham in my Hamper, I decided to use that instead. Totally delicious !

This salad has such delicious flavors and textures, it is quite a treat actually and if you use rotisserie Chicken or any leftover cooked Chicken, the salad is done within minutes. A quick, filling lunch or dinner on a hot night in a jiffy.

Chicken Parma and Avocado Salad

4 Servings

INGREDIENTS:

2 Handfuls Mixed Herb Salad Leaves
3 Chicken Fillets, cooked, cubed
1/2 cup Feta Cheese, cubed or crumbled
1 Avocado, peeled, stoned and cubed
10 Slices Parma Ham   {or Black Forest Ham}
1/2 cup Cashew Nuts

Dressing:

1 TB Balsamic Vinegar
2 TB Olive Oil
1/2 TB Honey
1 t Dijon Mustard
Salt and Black Pepper, to taste

DIRECTIONS:

1.) Arrange the Salad Leaves on a serving platter – toss together the Chicken, Feta, Avo and Parma Ham – scoop over the Salad Leaves – sprinkle over the Cashew Nuts.
2.) Combine the Dressing ingredients – whisk well – drizzle over the Salad.

Serve for lunch or as a light dinner with a crusty dinner roll on the side.
