As a side dish this Cheesy Buttermilk Potato Casserole is one of my family’s favorites. With only 5 ingredients the casserole is so easy to make and I normally have all the ingredients on hand.
Potatoes are one of the most versatile vegetables and when you combine potatoes and cheese it is most certainly always a winner.
Now and then I would add a layer of leftover ham or even ground beef and make a dinner dish out of the casserole. A crunchy side salad or two and we are happy. Served as dinner the recipe yields 4 adult sized servings or 2 adult and 4 kid sized meals.
I like to cook the Potatoes during the morning as I am home all day, but you can also cook them the night before. Slicing is much easier when the Potatoes are cooled and would not break as much when it is still hot.
We never have any leftovers even when I make the full recipe, and it is only 3 of us for dinner. Second helpings are almost the norm when we have this cheesy Buttermilk Potato Casserole on the dinner table.
You will notice I do not add any additional Salt or Pepper to the Buttermilk and Egg mixture, as I have found that the seasoning in between the layers as well as the Cheddar is more than enough.
A delicious, comforting side dish which can be served with just about any main meal – chicken, roasts, pork chops and more.
